Cleansing Beet Soup

This soup is rich, delicious, colorful and packed with antioxidants and minerals. It's the perfect soup when you're feeling like your body could use a little detoxing!
Ingredients:
1 tablespoon sunflower oil 1 medium yellow onion, chopped 1 clove garlic, minced 1/4 teaspoon sea salt 3-4 cups vegetable broth 2 large beets, chopped into 1" chunks (save beet greens) 1 carrot, chopped coarsely 1/4 head green cabbage, shredded 2 tablespoons freshly squeezed lemon juice
Recipe:

Heat oil in soup pot over medium heat.

Add onions, garlic and salt and saute until onions are translucent.

Add broth, beets, carrots and cabbage and bring to a boil.

Lower heat and simmer, covered for 10-15 minutes.

Wash beet greens, remove tough stems and chop greens into thin strips or small pieces.

Add beet greens and lemon juice and simmer 3-5 minutes.
