Dulse and Arame Salad

I created this recipe for a cooking class on sea vegetables and it was a huge hit! Dulse and arame are common sea vegetables that are packed with minerals and make a great addition to a salad. Sea vegetables (also called seaweed) can generally be found in the Asian section of the grocery store. 

Ingredients:

¼ cup arame

1 ½ cups baby spinach leaves

½ cup cooked quinoa (cooled)

¼ cup dulse, cut into small pieces

2 tablespoons extra virgin olive oil

1 tablespoons toasted sesame oil

2 tablespoons brown rice vinegar

1 teaspoons Dijon mustard

1 medium avocado

Recipe:

Place arame in a small bowl, cover with cold water and set aside. In large bowl, combine spinach, quinoa and dulse and set aside. In small bowl, combine olive oil, sesame oil, brown rice vinegar and Dijon mustard and whisk until smooth. Add dressing to the salad mixture and toss. Place the salad onto four small plates in equal portions. Chop the avocado into chunks and arrange on top of each salad. Serves 4
