If you think you don't have time for breakfast, try this fast and easy breakfast burrito recipe. You'll start the day off right with some good quality protein and a healthy serving of vegetables! Frozen veggies are suggested to save time in this recipe, but you can opt for fresh if you have time to chop.
Ingredients:
- 1 Tablespoon olive oil
- 2 eggs
- 1/2 cup frozen vegetables
- 1 whole wheat tortilla
- 1-2 Tablespoons salsa
- 1 Tablespoon parmesan cheese
Instructions
- Heat olive oil in a saute pan. Crack eggs into a bowl and whip
gently with a fork.
Add frozen vegetables to the oil and saute until thawed. Add eggs to the pan, lifting and turning with a spatula until eggs are completely cooked and veggies are soft. - Spoon cooked egg mixture into the center of the whole wheat
tortilla.
Add salsa and cheese and roll tortilla like a burrito.
Makes 1 serving
