Creamy Avocado Spinach Dip

If you love guacamole, you'll love this dip! Adding spinach is a great way to get more greens into your diet, and you won't even notice it's in there. This works great as a veggie dip or topping. If you want to spice it up, add some fresh peppers.
Ingredients:
- 1 avocado
- 2 cups spinach
- ½ cup pitted Kalamata olives
- 1 clove garlic, chopped
- ¼ cup olive oil
- Juice from ½ lemon
- 1 teaspoon cumin
- 1 teaspoon sea salt
Instructions
- Slice avocado lengthwise and remove the pit. Scoop avocado into food processor. Add spinach, olives, garlic and olive oil and blend. Additional olive oil can be added for a smoother texture. Add lemon juice, cumin and sea salt and blend until smooth.
- Serve with carrots, English cucumber, cauliflower, jicama, red peppers or any other vegetables of your choice.
