Quick & Easy Herbed Flatbread

If you're looking for an easy, gluten-free flatbread option, look no further! This flatbread is made from garbanzo bean flour, so it's high in protein and fiber. You can make it as thin as you wish, and use it like a cracker or a thin bread for sandwiches. Get creative by adding additional ingredients like olives or sundried tomatoes. Yum!
2 ½ cups garbanzo bean flour
1 teaspoon salt
2 tablespoons herbs de Provence
½ teaspoon fresh ground black pepper
3 tablespoons extra virgin olive oil
1 1/2 cups water
2 teaspoons grapeseed oil or olive oil
- Preheat oven to 450° F. In a large bowl, combine flour, salt, herbs, pepper, olive oil and water and whisk until thoroughly mixed. Set aside for 10 - 15 minutes.
- Pour batter onto baking sheet and spread evenly to ¼-inch thickness. Bake 8-10 minutes.
- Remove from the oven, brush with grapeseed oil or olive oil and sprinkle sea salt over the bread. Return to the oven and flash broil until golden brown.
*A hot pizza stone also works well for this, and gives the bread a crispier texture.
